Ingredients required for aloo beingan ki subji.
Ingredients. Quantity
Brinjals (beingan). 4-5 medium
Potatoes.(Aloo). 4-5 medium
Tomatoes. 1-2 medium
Onions. 1-2 medium
Ginger. 1 tsp
Garlic. 1 tsp
Green chilli. 4-5
Ghee/oil. 3-4 tsp
Cumin seeds. 1tsp
Corriandor pwd. 1 tsp
Turmeric pwd. 1 tsp
Red chilli pwd. 1/2 tsp
Garam masala. 1 tsp
Green corriandor. 1-2 tsp
Salt. 1tsp or to taste
Water. 2-3 cups
Cooking method of Aloo beingan ki subji.
1. Wash beingan,aloo properly & soak them.
2. Cut beingan &aloo into cubes.
3. Heat ghee/oil in a pan.
4. Add cumin seeds & fry till they become crumbley.
5.add finned chopped onions in it & fry till golden colour.
6.add tomatoes,ginger,garlic,green chilli paste & fry 2-3 minutes on medium flame.
7.add turmeric pwd,corriandor pwd, red chilli pwd,garam masala & mix all ingredients properly.
8.add Potatoes,beingan pieces into gravey & some water.
9.add salt to taste.
10. Cook 10-15 minutes on medium flame.
11.garnish with corriandor leaves.
12.serve hot with chapatis, Pranthas,poori
